my theory is: humans who went into the nether, a ghast blew up their portal, they had no obsidian or flint and steel to go home, and they evolved into pigmen, they all accidentally fell into lava, and they became undead, hence, they are zombie pigmen

but that doesn't make too much sense as piglins exist and zombie piglins have been stated to be zombified piglins
