Honestlt 3 looks cartoony and a bit nice. More with out the excessive shading. 2 I dont like much cause the eyes are simple and the shading is a bit rough. As in the way it looks like realistic shading on cartoon. Maybe make a specific dark color that is a bit colder for shading like that. To where it's more solid
1 looks cute too.

Alright, your hair, ears, and head shape are good, but with the arms and torso, I think you should try and use circles and maybe look at references on Pinterest or just your search engine(Google, Edge, etc). As for the joints, draw a circle and a line to the next joint(like the shoulder to the elbow, the elbow to the wrist, etc.).
If this doesn't help, let me know and maybe I can make a tutorial ^^
