Imo the game itself was not very good, the art was nothing special and the gameplay was eh. But the character development was good, and I really liked it the first time I watched a playthrough, but sadly the better the character development is in the game, the more cancerous the community it spawns.
I always though tthe characterization, at least at the beginning (I couldn't get past the Toriel fight), was pretty bad. Like, flowey was okay, except for the fact it's just "hey I'm the evil one" but Toriel is just an objectively bad character that I'm supposed to not think of as bad? The fight is just "I'm not going to tell you the truth, so kill me."
Yeah I didnt really like toriel, I didnt really even like sans, I didn't like papyrus either, since they all relied on stupid jokes for their plot points. I thought the side characters like the ghost thing I forget his name were more interesting and more developed.
I also ****en hate alphys that weeb bastard, he doesnt even know basic medical ethics too with that lame ass sex dungeon of a labratory. I've worked in a lab and ill tell ya that is not up to regulation standards.
I haven't played the game, or even seen through a whole LP, but the game seems to be trying to be equal parts parody of an RPG, as well as one of those "feelsy" walking sims like Life is Strange, where they make you "feel" for the "developed" characters. As far as I know, they don't mesh well.
E.G. Neutral run, or the "I play video games for fun" approach, seems to punish you for playing it like the fun RPG that you are meant to think it is.
Yeh, when I first played Undertale, I refunded it on the first day. That's one of my only problems with the game, It starts you off in an ugly setting, horrible start-off.
I've never liked any RPG, so I assumed I wouldn't like Undertale. Buncha youtubers I watched kept talking about how great it was, so three months later I bought it again cause I felt I didn't give it a fair chance. Really glad I did.

If he made the game in a way that didn't promote such a fanbase, like making it have deeper storylines or more complex characters, and not have the lovey-dovey attitude around it, it would be a far more interesting game with a far less annoying fanbase.
At its essence the game undertale was basically about a protagonist going through a storyline with a bunch of heavily insecure characters, with little to no actual depth or convolution within the story.
